Soup is popular in almost every culture. Each nation has its own version. Soup reminds me of tea in a sense. If you love it, you get bubbly to try new ones.
I had the Italian sausage and lentil soup from Carrabba’s Italian Grill, last year. Feedback? It blew my mind. When that happens, I have no option but to make a version at home. So I’ve been doing that for a while. And I’ve managed to blow a few minds too.
Here’s a rough guide to making your own. Like I’ve said before, the measurements aren’t exact for my recipes. I have a thing for cooking so I just wing it (bad idea). Now that I’ve decided to share my dishes, I’ll start measuring to make things easier for you.
Ingredients
half pack of lentils or 15 beans or 16 beans mix.
1lb of beef cut into small cubes and seasoned (I had no sausage)
1 or 2 large carrot
1 large onion
6 or more cloves of garlic
1 large tomato
1/2 - 1 large bell pepper
Oil/butter
Salt
Italian seasoning
Parsley
Water
Directions
Soak beans overnight and cook on the stove until cooked about 70% or in a slow cooker for 2 1/2 hours
In a deep pot, add 3 tablespoons of oil or butter.
Toss cubed beef or sausage until golden brown.
Add your diced vegetables and herbs. Cook until carrots are softened a bit.
Add your beans with some of the water it soaked in or slow-cooked in. Just enough to barely cover everything in the pot.
Add lid and stir every 3 minutes. Cook like this for about 10 minutes and then add more water, enough to rise about 1.5 inches above the current level.
Add salt and other seasonings to make the liquid flavorful.
Cook on high and maintain the water level.
Add more seasoning if additional water weakens the flavor.
Check if the beans are thoroughly cooked. If they are, reduce the flame to low and let simmer for 15 minutes. You may add some butter and final seasoning to perfect the flavor.
Stir and serve.
